Is chicken fried steak smothered in white sausage gravy good for you ?

It sounds like there might (finally) be a market for gourmet Se-rich salt collected from certain ponds in the lower San Joaquin Valley? Sprinkle it on your poke (instead of that Hawaiian pink salt), just to be sure?
-
@Cap'n -- I'm only being rhetorically flippant as we do try to be responsible in food sourcing in our house. Sadly, it is difficult unless you know the purveyor personally. We actually do buy our pork from a local farm that raises beef and pigs humanely, though they aren't certified by anyone one way or another. My son works there occasionally on weekends so we have an in.

But then again, who needs science, right Mr. President?

The new selenoenzyme inhibition paradigm for mercury "toxicity" has cleared up several mercury conundrums that had been mystifying for decades... it's so cool when new discoveries explain stuff we didn't understand for a long time!!
-
The Hg discussion prompted me to read Nick Ralston's latest "in press" synthesis paper which he kindly sent me and I've been carrying around in my shoulder bag for a couple months now. The Hg story gets even more fascinating. Hg toxicity is not actually Hg toxicity, but rather the effects of Se deficiency as methyl-mercury binds with and ties-up the selenoenzymes responsible for protecting the human brain from oxidative damage!!

Herring and liverwurst are german staples for snacking, pre dinner small plates

Increasingly it's not just farmed fish and shellfish that are being dosed with pharmaceuticals, see this: https://e360.yale.edu/digest/concentrations-of-pharmaceuticals-in-freshwater-increasingly-globally. Years ago I attended a lecture by researchers who pointed out that human male fertility was declining in step with increasing exposure to endocrine disrupting chemicals. They also noted the sharp increase in conc.s of anti-depressant pharmaceuticals in water supplies. Their conclusion: ...

What I'm taking away from this thread is that I should be offering up some of my Alaskan salmon in my trade offers. We have around 20lbs in the freezer.
-
Herring are one of the best fish you can eat, both health-wise and environmentally. Sardines, anchovies, kippers, sprats, etc. All good!
-
I eat a tall jar of pickled herring weekly, am.i going to live to age 55 ?

Now that we’ve ruined Hammer’s dinner, should we start in on Brew’s pork chops? Speaking of the Wind, the best backpacking trip I ever took was a loop in the Wind River range...though Brew’s must be a different Wind River, since this is east of the continental divide.
-
While I think you’re joking....you won’t find any; there’s no commercial trade in wild-caught Atlantic salmon any more. It’s all farmed. Seafood Watch is pretty explicit about which suppliers to buy from, looks like we can’t even apply a general rule like “Norway good, Chile bad.”
-
Best salmon i ever had we caught in the wind river, a tributary of Columbia river. We brined it and smoked it. May be best thing ive ever eaten
-
Your best bet, short of knowing the fishery and supply chain back to front, is to buy MSC / ASC certified products. There are other certifications, but those seem to be the most common, and gets you to at least a "Good Alternative".
-
It's incredibly hard to make what feels like the right decision when it comes to salmon. Seafoodwatch.org lists 30 different fisheries, with only 2 in the "Best Choice" category. Even living in the Northwest, it's nearly impossible to watch in to the local safeway and get a fillet of responsibly fished salmon, or soundly farmed salmon that are not loaded with dyes and antibiotics.
-
I'll have to look at the actual packaging to see which products are wild-caught by Norwegians.
-
A quick look at TJ’s web site isn’t very reassuring; a search for “sustainable seafood” only produces this, which doesn’t mention salmon specifically: https://www.traderjoes.com/Faqs/FaqById?faqid=23 . The same search on WFM’s site leads to this: https://assets.wholefoodsmarket.com/www/missions-values/seafood-sustainability/WholeFoodsMarketQS_Farmed-finfish-shrimp_Jan1-2014.pdf .
-
Hammer, see Mikey’s comment about farmed salmon in general. I’m surprised TJ’s still sells Chilean farm-raised salmon; in addition to the common problems of salmon farming, Chile has a huge problem with antibiotics use, using about 600 times as much antibiotics as Norway, to produce about 3/4 the fish. But, there are producers who use less. I’d look at TJ’s policy, if any, about how they select their producers.

Yes, that’s what I meant, sorry for the confusion. It’s a little annoying that the tuna industry has been saying for years that a public health concern has been created (or at least magnified; they might not have argued with the FDA concern for pregnant/lactating women) to fight an environmental battle (exactly what I’m suggesting we keep doing), and it sounds like they’re right.

Are Berkshire pork.chops okay t eat ? Have a business dinner tonight at The Capital Grille
-
Hmmm. So tell me about Trader Joes farm-raised Chilean smoked salmon? It's not shark.
-
OK Crunch, I think I finally get your comment. You're not questioning the research, just worried about implications for future survival of ahi species. Better that people don't know they can eat ahi seven days a week!
-
While Hg conc.s consistently track trophic levels, peaking in top predators... The Hg:Se ratios do not.
-
Crunch, Mercury created two species of tuna? Never heard that one before. If you find critical flaws in the work of Nick Ralston's research team, you know me, I'm all ears and open to persuasive arguments. Anyway, so far am not aware of any data showing any spp. of tuna w/ Me-Hg:Se ratio > 1.0
-
NGB, it might be best to keep quiet about top predators being fine to eat. Mercury might be the reason we have yellowfin and bigeye tuna. Brew, fish (mostly—tako poke is also good, and some folks like abalone, crab, even tofu poke), usually ahi, sometimes yellowtail or salmon.
-
Poke fish or poke salat ?
-
P.S. - I had an ahi salad just last Saturday, man is that stuff tasty!! Maria found the Reverend on tap for the first time at the brew house we were dining at, and now has ruined what she was getting from liquor stores. I went ahead and tasted hers at the brew house and then some from the six-pak at home, and she's right... even I can tell, and I don't drink beer.

Seale, L.A., N.V. Ralston, and M.J. Berry. 2011. Role of selenium in mitigating mercury toxicity: biochemistry research trends. Nova Science Publishers, Inc., NY, NY. 52 pp. [most readable, concise, summary of where research stood as of beginning of this decade]. More recent work has only strengthened the 2010 consensus.
-
Crunch, Start packing. We now know that only fish tissue with a molar ratio of methyl-mercury to selenium of greater than 1.0 contains bioavailable mercury that can be transferred to consumers of fish meat. Almost all sport and commercial ocean fish species have been tested now and only toothed whales and predatory sharks have ratios greater than 1.0. The scientific consensus now is that health benefits of consuming fish with ratio less than 1.0 far outweigh any mercury exposure risk.
-
*espionage? Just delete the word, I don’t know where it came from.
-
NGB, are you saying ahi is okay? (At least re Hg, we’ll leave the question espionage of taking these fish out from f the sea for another thread.) I may move back to HNL and go back on the all-poke diet.

I'm not bored anymore, we have games everyday!! Voit and Bryant's HRs in their first spring training PA's are completely meaningless, yet still erase boredom for me...

When ngb gets bored ,this board gets " intereresring ".

The message board has taken a dark turn from the muppets conversation the other day.

... that last word was "researchers"

Regarding salmon, depends on if it's wild or farm raised. For farm raised, when they have a pen break and they get out into the stream channel, the EPA classifies them as contaminants because they have so much crap in them (though not so much mercury unless from certain rivers in Maine).
-
Hammer, I'm assuming the "never change" comment is related to recent trade? Also, current science on risk from mercury in fish is that it's the ratio of mercury and selenium that's important, not just the mercury. Almost all state health departments are far behind on this, and in fact, many of the specific water bodies, and specific spp. of fish that were previously of concern w/ regard to potential health effects from mercury exposure are no longer seen as risky, at least among rese

My fear is memory loss. Between 70 and 80 my mom went from forgetful to having no short-term memory at all. It's not full blown dementia, but it's pretty bad.

NGB, you never change.

We were discussing mercury the other night. My daughter loves salmon and my wife was balking at making her so many smoked salmon sandwiches a week. Turns out the salmon is not so bad. My daughter won that argument.

Diabetes is our fear now

Probably for many of us, including me, being overweight is number one health risk by far anyway, no need to worry about much else until that's addressed.
-
Yeah, just an informational post... wasn't suggesting folks stop drinking beer. Even ppb levels can have effects, but not likely to be important for anyone who is post-reproductive, or w/ less than 40 years of expected lifespan remaining. Probably potential for direct effects on liver from alcohol content a way bigger risk anyway.
-
Brew, last year the EU decided to allow the continued use of glyphosate for another 5 years. Germany voted for the extension (this pissed off the Social Democrats in the government, but the best they hoped for was to abstain from voting). It’s used on about 40% of farmland in Germany.
-
Once everything is Roundup resistant, they'll stop using though. So you have that to look forward to.
-
Everything you eat and drink has detectable levels of glyphosate, as do most people. It's a bummer, but if you were to avoid everything with a few ppb of glyphosate you would have to avoid everything.
